From April, fishing springs back to life on the cold waters of the Gulf. The first snow crab traps surface, signaling the start of a season eagerly anticipated by seafood lovers. In May, lobster takes center stage amidst the maritime hustle and bustle. By June, the variety of catches evolves week by week, with each landing a testament to the fishermen's expertise and their profound connection to the sea.

Watching these fishermen in action is a spectacle in itself. Whether strolling along the bustling docks or chatting with sailors returning from their sea trips, each encounter reveals a glimpse into Gaspésie's unique expertise. Rivière-au-Renard, Quebec's maritime fishing capital, is one of the best places to experience this springtime buzz. Activity there is constant, punctuated by the comings and goings of boats and the unloading of fresh catches.

For an even deeper immersion, stop by the local fish markets. Here, the taste of the open sea can be savored right on your plate.
